Se ancora non le avete provate, vi consiglio inoltre le altre ricette di cucina tedesca già presenti sul blog: gli Späetzle (una sorta di pasta che si lascia goccialare direttamente nell'acqua bollente), la Flammküchen (conosciuta nel nord della Francia anche come Tarte Flambée), lo Spießbraten (un buonissimo arrosto di maiale ripieno di pancetta e cipolle) e i classici Lebkuchen, i biscottoni di panpepato. Cooking is not the most important topic in this blog, but I find it nice to share with you some interesting dishes from time to time. In particular I am really happy to share German recipes, especially for those who think that you can eat well only in Italy... this is time we're talking about a real classic: the Brezels. For your information, I re-wrote and slightly modified the recipe I found in a book about bread, 'Fare il pane in casa', published by Giunti.
If you didn't try them out jet, I would like to recommend you also all the other German recipes already published in this blog: the Späetzle (a sort of pasta with milk which drips directly into the boiling water), the Flammküchen (a sort of cheesy flat pizza, well-known also in France as Tarte Flambée), the Spießbraten (roasted pork filled with bacon and onions), and the big gingerbread cookies called Lebkuchen.

Ingredienti:
450gr di farina 00 (dalle foto potete intuire che l'ho mescolata a piacere con farina integrale)
20gr di lievito di birra
3 cucchiai di bicarbonato
3 cucchiaini di sale fino
sale grosso qb
L’impasto dei brezel lievita in due tempi. La prima lievitazione dura mezz’ora, e viene fatta a partire dal lievito, 100 ml d’acqua tiepida e 100 gr di farina.
Quando il primo impasto è pronto e lievitato, aggiungete (lentamente) 150 ml di acqua tiepida, il resto della farina (350 gr), e il sale. Impastate fino ad ottenere un impasto liscio e morbido, e lasciate lievitare coperto per un’ora.
Dividete l’impasto in otto palline. Stendete ogni pallina per lungo in modo da formare una 'corda'. Una volta raggiunta la lunghezza desisderata, incrociate due volte le estremità, lasciando il centro della 'corda' arrotondato, e attaccatele sui lati, nella tipica forma 'a bretsel'. Preparate un pentolone con 4 litri di acqua e tre cucchiai di bicarbonato. Quando l'acqua bolle immergete ogni bretzel per 40 secondi circa, scolatelo (io lascio riposare un paio di minuti su uno strofinaccio) e adagiatelo su una teglia coperta di carta da forno. Cospargete i brezel di sale grosso, soprattutto sul lato più spesso. Infornate a 220° per circa quindici-venti minuti (io uso la parte bassa del forno, con ventola), lasciate raffreddare e servite. Sono particolarmente buoni tiepidi e riempiti di burro (di quello buono); la combinazione può portare a dipendenza... Ingredients: 450 gramms of white flour (you can see from the pictures that sometimes I mix it up with wholeweath flour) 20gr of fresh yeast 3 big spoons of baking soda 3 teaspoons of salt salt in grains - to taste The brezels dough rises for two times. The first time you need to mix up the yeast together with 100gr of flour and 100ml of luckewarm water. After half an hour, add to the dough 150ml of luckewarm water, the remaing flour (350gr), and the salt. Knead well, cover with a towel, and let the dough rise for one hour. Split the dough in eigth balls. Roll each of them with the hands to obtain a long sting. Once the string is long enough, cross the edges twice, and fix them of the sides in a 'bretzel-shape'. Put a large pot on the stove, with 4 liters and three spoons of baking soda in it. When the water boils, cook each bretzel for circa 40 seconds. Place them on a towel for two minutes to let them dry, then place the brezel on a tray coved with baking paper. Sprinkle salt in grains on the brezels, especially on the 'thicker' side. Bake for 15-20 minutes at 220° degrees (I use the setting low with ventilation). Take the tray out, let the brezel cool down and serve. They're particulary nice filled with good butter - beware, you may get addicted to it...
