Questa è una delle ricette che mi sono piaciute di più per questo mio esperimento di friggitoria temporanea. Forse i puristi dissentiranno, c'è chi mangia i molluschi praticamente crudi, o appena scottati e questa immersione in pastella e olio bollente può sembrare una cosa fuori dal mondo. Eppure le cozze fritte sono qualcosa di eccezionale. Il loro sapore viene racchiuso in una pastella croccante e esplode in bocca appena il boccone viene addentato. Adoro le diverse consistenze e il fatto che siano accompagnate da una crema ricca e aromatica le rende un ottimo secondo piatto o le trasforma in uno sfizio da condividere sorseggiando un ottimo prosecco.Di facile esecuzione questo piatto porta in sé la gioia dell'estate da replicare tutto l'anno.Per 2 persone
- 1 cucchiaio di burro
- 1 cipolla dorata
- 1 kg di cozze
- 2 cucchiai di liquido di cottura delle cozze
- 1 cucchiaio di succo di limone
- 4 rametti di dragoncello
- una piccola manciata di foglie di prezzemolo
- 4-5 cucchiai di panna fresca
- 1 uovo
- 3 cucchiai di latte
- 3 cucchiai colmi di farina 0
- sale marino fino
- pepe nero
- 1-3 l di olio di semi di girasole
This is one of the recipes that I liked most amongst those I created for my temporary “friggitoria” (that's what we call a shop where you can buy fried food in Italy). Maybe the purists will disagree, some people eat the shellfish virtually raw, or stir-fried for a couple of minutes, and this dipping it in batter and deep frying it may seem outrageous. Yet fried mussels are quite exceptional. Their flavour is enclosed in a crispy batter and explodes in your mouth when you bite into it. I love the different textures and the fact that they are accompanied by a rich and aromatic sauce makes this a great main dish or, in smaller portions, a treat to be shared while sipping a great prosecco. Easy to be made, this dish bears the joy of summer to be made again and again throughout the year.For 2 servings
- 1 tablespoon of butter
- 1 yellow onion
- 2.2. lb mussels
- 2 tablespoons poaching liquid
- 1 tablespoon lemon juice
- 4 tarragon sprigs
- a small handful parsley leaves
- 4-5 tablespoons cream
- 1 egg
- 3 tablespoons milk
- 3 heaped tablespoons all-purpose flour
- fine sea salt
- black pepper
- 1.3 l sunflower oil
