Perla salsina:
olioextravergine d’olivaunmazzo di prezzemolo1cucchiaino di aceto bianco1-2spicchi d’agliounpizzico di cuminounpizzico di saleunpizzico di pepePer la salsa le istruzioni sonosemplicissime: tritate tutto, aggiungendo olio finché non otterrete unaconsistenza “salsosa”.
Perle patate:
Calcolate 3-4 patate a persona dipiccola-media misura. Se volete un consiglio, visto che vi dovete mangiareanche la buccia, io fossi in voi almeno stavolta le comprerei biologiche, anchese magari non è vostra abitudine. Lavate le patate e mettetele ariposo in acqua e limone per mezz’ora. Togliete metà dell’acqua, sostituitelacon acqua fresca e mettete le patate a bollire fino a cottura. Scolate lepatate e rimettetele nella pentola vuota assieme a due o tre manciate di salefino. Cuocete ancora due o tre minuti girando. Servite le patate intereaccompagnate dalla salsa. Un’alternativa simpatica è quelladi tagliare le patate a fette e servirle già condite, come antipasto.
Papas arrugadas
This month I keep onposting “vegetarian”, don’t know why! Actually I have other posts waiting, butthis evening I was really feeling like “wrinkled potatoes”! Bought, cooked,immortalized (I wonder if my son thinks that is normal, to have mummy takingpictures of the dishes before eating), eaten, and posted! Is it maybe because yesterday,choosing some of my favorite blogs, I spoke about eco-cooking? In fact withthis recipe you don’t throw away anything, not even the potatoes’ skin, and itis a good way to use old persil. It is a really simple recipe,really tasty, maybe a bit too much for really small kids, but a greatalternative to French fries when they’re a little grown up. Belive me, it isworth trying it!
Forthe sauce:
Extravirgin olive oilA bunchof persil1small spoon of white vinegardA bit of grounded cuminA bit of saltA bit of pepper
For the sauce the instructionsare simple: just chop everything, adding olive oil until it looks like a sauce.
Forthe potatoes:
Count 3-4 medium-small potatoesper person. Since you have to eat also the skin, I highly recommend buying organicones. Clean the potatoes, and leavethem for half an hour in water and lemon. Remove half of the water, replace itwith fresh one, and boil the potatoes until they’re cooked. Drain the potatoes,and then put them back in the empty pot together with two-three handful of tablesalt. Serve the potatoes in full, with the sauce. As a nice alternative, you cancut the potatoes in slices, dress them, and serve them as appetizer.
