Biscotti fichi e mandorle / Figs and almond cookies recipe

Ingredienti: 180 gr di farina 00 20 gr di farina di riso 80 g di burro 60 gr di zucchero semolato 1 uovo 1 cucchiaino di lievito in polvere scorza grattugiata di 1/2 limone Per la farcia: 100 gr di mandorle a lamelle 200 gr di fiordifrutta fichi Rigoni di Asiago
Preparazione: Sulla spianatoia impastare velocemente le farine con il burro morbido, l'uovo, lo zucchero, la scorza del limone e il lievito. Formare una palla da porre in frigo a riposare per 30 minuti circa. Trascorso il tempo di riposo, accendere il forno a 170°C. Stendere la pasta frolla in un rettangolo di circa 30 x 50 cm su un foglio di carta forno. Escludendo i bordi, spalmare la fiordifrutta ai fichi e cospargere le mandorle. Piegare la frolla in 3 e pressare le estremità delicatamente. Infornare per circa 35-40 minuti. Una volta cotto, tagliarlo a fette.

Ingredients: 180 gr (6,3 oz) all-purpose flour 20 gr (0,7 oz) rice flour 80 gr (2,8 oz) unsalted butter 60 gr (2,1 oz) caster sugar 1 large egg 1 teaspoon of yeast grated lemon zest of 1/2 lemon For stuffing: 100 gr (3,5 oz) flaked almonds 200 gr (7 oz) fiordifrutta organic fruit spread fig by Rigoni di Asiago
Directions: Knead fastly on the working surface the flours with softened butter, the egg, sugar, grated lemon zest and yeast. Shape a ball and chill in the fridge for 30 minutes. After the resting time, preheat the oven at 338°F. Gently roll out onto a greaseproof paper until the shortbread is about 1/2 cm thick and a shape of 30x50 cm. Avoid the edges, brush the fruit spread and dust the surface with the flaked almonds. Fold into 3 parts and press the ends; bake into the oven for 35 to 40 minutes. Once cooked, set aside to cool for 2 minutes and slice to get the cookies.  Francesca Maria
