It happens sometimes that you really don't feel like cooking a whole meal, or you just want to remove an itch you have. Well, this recipe goes back a few years ago, when i was still in Italy and sometimes i worked on experiments in the kitchen with the help of my sister (or in this case i guess i helped her)! You need for the preparation 500 g of flour, 30 g of brewer's yeast, olive oil, coarse salt, 200 g of brie, 200 g of fontina cheese (if you don't find it use emmental or cheddar), 2 tomatoes and pepper. First prepare the focaccia, starting to melt the yeast in warm water. Put the flour on the pastry board (or on the table..) and add to it a pinch of salt, then create a well in the center and pour in it the yeast and some more warm water. Knead with energy to get a soft and compact mix, make a ball of it and make a cross on the surface. Let it rise until its volume will be doubled, then work on it again, oil a baking tin and spread the dough tapping with the fingertips. Brush the surface with oil (enough to fill the holes left by the fingers). and sprinkle on top some coarse salt. Cook in the oven at 220° for more or less 20 minutes, then take it out and cut it in pieces. On each of them put the brie finely sliced and on top of it a slice of fontina, then put in the oven again for a few minutes until the cheese are melted. Cut the tomatoes in slices and put them on top of the focacce, completing with ground black pepper. I think is longer to write it than make it :D enjoy it also for me, since i can't eat it anymore (because of the intolerance...). See you soon!
