Here i am again on my dear blog, sorry i was gone but i had two pretty busy weeks. To make it up to you today's recipe is one of my absolute favourites revisited to be fast keeping its distinguishing flavor. We are talking about paniscia, a dish made of rice from my region (Piemonte) which has many variants, different names and a taste nothing short of spectacular. The original recipe involves the use of a lot of ingredients and a slow cooking, but for who has problems finding the raw materials or who simply has not time to spend in the kitchen, here is an accelerated version! Do you know the cans with ready-to-eat minestrone soup? So, that will be the starting point.. take 350 g of risotto rice, a can of minestrone (500 ml), half onion, vegetable stock cube, salt, pepper, olive oil, 1/2 glass of white wine and, of your choice, some salami paste (which i use in place of salam d'la duja). If you notice that in the minestrone there are not enough beans, important for the preparation, buy apart a can of borlotti (brown beans). Brown the onion in pieces in some oil, then add the rice and toast it for a few minutes. Pour the wine and, when it will evaporate, add the minestrone and half a stock cube. Let cook over low heat so the water will be absorbed, adding slowly more until the rice will be cooked. A little before the end break the salami paste in pieces and put them in the pan, then lastly add salt (if it is not tasty), pepper and, to taste, some butter or margarine to stir. Buon appetito!
