Risotto alla rucola, scamorza affumicata e noci / Risotto with rocket, scamorza cheese and nuts

Ingredienti per 4 persone: 300 gr di riso carnaroli 1 cipolla bianca circa 1 litro di brodo vegetale 60 g di scamorza affumicata 50 g di rucola fresca 2 manciate di noci sale, pepe nero olio extravergine di oliva
Procedimento: Far appassire la cipolla tagliuzzata finemente con 2 cucchiai di olio di oliva. A parte tritate la rucola. Aggiungere poi il riso e sempre mescolando anche il brodo fino a raggiungere la cottura desiderata del riso, circa 15 minuti. Spegnere il fuoco, aggiungere una noce di burro, la scamorza spezzettata e la rucola. Mescolare delicatamente e servire aggiungendo qualche gheriglio di noci.

Ingredients for 4 servings: 300 gr (10,5 oz) Italian rice 1 yellow onion 1 liter of vegetable broth 60 gr (2,1 oz) smoked scamorza Italian cheese 50 gr (1,8 oz) fresh rocket 2 handfuls of nuts sea salt, black pepper extra virgin olive oil
Method: Heat gently the onion with 2 tblspoons of olive oil and separately chop the arugula. Stir in the rice and add the stock and bring to boil. Reduce the heat to a simmer, cover and cook for about 15 minutes until tender. Remove the pot from heat, stir in the arugula, a knob of butter and cheese cut into small pieces. Toss to combine and serve dusting few pieces of nuts.
