I boughtina fitof culinary madness,two beautifulmonkfish(about 250geach)with the idea ofpreparing themsimply.
My husbandhasfound outto lovethis fishwhen,someyears agoin Rimini,haseaten bya'fainting':delicious!
Since then hehaveoften askedto try toreplicate therecipe but, frankly,I do not evenremember howcomposed, let aloneequal hisgoodness...
So Ihaveinvented a recipe usingfew buttastyingredientsalways presentin my home,potatoes andleeks
Ingredients for 2:
- 2 monkfish (about 250 gr or 9.0 oz each)
- 2 potatoes
- 1 big leek (or 2 small)
- 2 tbsp breadcrumbs
- 1 tbsp garlic and chopped parsley
- salt, extra virgin oliveoil anddried chives
I washed, peeledand cutinto chunksregularpotatoes andthe white part ofleek.
Isautéthe vegetablesin a panwith oilevo,salt andchives
Icookedabout 10 minutes
in the meantimeI havewashedand peeledthemonkfish.
I lined a baking pan with oven paper, I put the vegetables and I set above fish. I mixedthe breadcrumbs withthe parsley andgarlic and salt, I distributedthis mixtureover the fishand vegetables Ibakedin preheated ovenat 180degreesfor 25minutes.
Ifinishedcookingby turningthe grill fora fewminutesto colorthe surface
Place on the plateIjustskirtingthe fish withthe vegetables
