Zucchine rotonde ripiene vegane / Vegan stuffed round zucchini recipe

Ingredienti per 4 persone: 4 zucchine rotonde sale fino, pepe nero pangrattato 2 carote 5 cipollotti 10 foglie di basilico fresco
Procedimento: Accendere il forno a 200°C. Lavare e asciugare delicatamente le zucchine e rimuovere la calotta superiore. Rimuovere la polpa interna e tenerla da parte. Tritare la polpa delle 4 zucchine, dopodiché aggiungere le carote e i cipollotti fatti a pezzetti e far cuocere in padella con un po' d'olio per 5 minuti. Salare e pepare e poi aggiungere il pangrattato (circa 2 cucchiai) e le foglie di basilico tritate. Riempire le zucchine con il ripieno e mettere in forno a far cuocere per 10/12 minuti circa. Servire le zucchine calde o fredde.

Ingredients for 4 servings:     4 round zucchini fine salt, black pepper bread crumbs 2 carrots 5 spring onions 10 leaves of fresh basil
Instructions: Preheat oven to 400°F. Wash and dry the zucchini, then cut in half through the cap. Scoop out the seeds and flesh from each zucchini and reserve the insides. Cut into small pieces the cherry tomatoes. Chop up the zucchini insides, lightly sprinkle with salt, pepper and few olive oil and roast with the carrots and spring onions cut into small pieces for 5 minutes over medium flame, stirring constantly. After add the breadcrumbs (2 tblspoons) and minced basil. Toss well to get a moisted mixture and fill each zucchini. Place baking dish in oven for 10/12 minutes. Serve hot or chilled.
