Gratin di patate: un contrasto morbido - croccante
Ieri qui c'eta un freddo becco e il mio bimbo-ragazzo aveva invitato un suo compagno di scuola a pranzo. Avete presente dei lupetti affamati? Bene cliccate e ingrandite in versione adolescente. Dovevo preparare qualcosa sostanzioso, ma cosa?
Volevo preparare il fricò (come si può notare dalla pancetta e dal formaggio montasio), il tortino di origini friulane cotto in padella. Mi incuriosiva il sapore forte, ma non ero convinta della frittura. Nel frattempo ero anche tentata dalla morbidezza del gratin dauphinoise (ed ecco la cottura in forno e la panna) ma un po' meno dal sapore che pensavo non troppo deciso per degli adolescenti .
Non sapendo bene quale delle due versioni scegliere ho fatto un mix e conoscendo l'appetito di mio figlio invece di immaginare gli ingredienti per 4 persone, ho calcolato per 6.E bene ho fatto!

Ingredienti:
Per 6 persone
- 1,5 kg di patate
- 100 gr di pancetta dolce arrotolata tagliata a fette sottili
- 300 gr di formaggio montasio
- 250 gr di panna fresca
- sale e pepe
Scaldo il forno a 190°.Metto sul fondo della teglia uno strato di patate, spolvero con un poco di noce moscata e copro con qualche fettina di montasio e pezzettini di pancetta croccante.Continuo con un nuovo strato fino a riempire la teglia. Termino con motasio e pancetta.Bagno il tutto con la panna e metto in forno per 20 - 30 minuti, finchè la superficie non sia bella rosolata.
Per ridurre le porzioni di questa ricetta vi consiglio di ridurre le patate, ma non il formaggio e la pancetta. Il gratin sarà ancora più ricco e saporito.

When you cut the potatoes (and when you peel) is good to dip them in waterimmediately. It prevents become yellow and at the same time removes the starch that comes out during cutting.
I rinse the potato slices and cook in boiling salted water for a few minutes (3-5minutes by boiling).
In the meantime, I cut the cheese in thiny slices and bake on the hot grill the slices ofbacon. I like the contrast between the crispy bacon and the softness of the potatoes,but if you do not like in a particular way the contrasts of textures you can skip this step.It 'a shame though! Preheat oven to 190 degrees.
I continue with a new layer to fill the pan. I end with montasio and bacon. I covereverything with the cream and bake for 20 to 30 minutes, until the surface is beautiful browned To reduce the portions of this recipe, I suggest you reduce the amount of potatoes, but not the cheese and bacon. The gratin will be even richer and more flavorful.
