- 1 banana matura
- 4 cucchiai di yogurt bianco magro
- 1 manciata di mandorle non pelate
- i semi di una bacca di cardamomo verde
- 1 cucchiaino di estratto di vaniglia
- 100 ml di latte ( potete usare anche latte di soia, riso, cocco)
If you have ripe fruit lying in the fruit bowl here is a great idea: prepare smoothies and freeze them. When time will come for a nice smoothie you will have your base ready for a tasty and nutritious drink suitable for breakfast, afternoon snack and why not, to break the mid-morning or afternoon peckishness. But what is a smoothie? It 's basically a sweet drink made from fruit that may contain milk, yogurt, dried fruit, honey, it has the same consistency of a milkshake. It is usually served well chilled with crushed ice in or as in this case we start from a frozen fruit base.
I learnt that many people use muffin tins to freeze portions of soups, broth or drinks, and I took inspiration for my banana and almond smoothies.
Here's how I prepared my smoothie base.
•1 ripe banana
•4 tablespoons low-fat plain yogurt
•1 handful unpeeled almonds
•the seeds of a green cardamom pod
•1 teaspoon vanilla extract
•100 ml milk (you can use soy or rice or coconut milk)
The quantities are not very important, it depends greatly on the amount of fruit you use, if your banana is not very large use less milk otherwise your smoothie will be too thin. Put all the ingredients into a blender cup and operated until the almonds are finely chopped and the mixture is smooth and dense. Pour the contents of the blender into the muffin tin holes and place it in the refrigerator until the mixture solidifies. I used a 6 holes silicone tin with a tray underneath for stability . When the mixture is frozen transfer it to a re-sealable freezer bag and when you feel like a smoothie to take two portions of the frozen base put them in the blender, add a little milk, some spice of your taste, like ground cinnamon or ginger, fresh mint leaves or basil if you like the combination with the fruit that you have used, sweeten with a little honey or maple syrup, add a handful of berries for colour, blend and serve. Utterly delicious!
